Seitan 'Beef' & Pepper Stir-Fry


Succulent pieces of seitan 'beef' in a rich umami sauce with strips of hot and sweet peppers; best served with noodles or rice and lots of fresh, fragrant coriander...

SERVES:   PEOPLE              |         PREP TIME:   10 MINS              |          COOK TIME:    20 MINS

    

INGREDIENTS

2 tbsp olive oil
1 red chilli, deseeded 
3 cloves garlic
1 jar Biona Seitan Pieces in Tamari & Ginger Marinade
6 Turkish hot green peppers, deseeded
2 sweet red peppers, deseeded 
1 tbsp tamari 
1 tsp cornflour (mixed with 3 tsp water to make a slurry) 
1/4 tsp white pepper 
Noodles, to serve
Handful fresh coriander, roughly torn


METHOD

1. Finely mince the red chilli and the garlic, then add to a pan on a medium heat with 2 tbsp olive oil.

2. Pour the marinade from the jar of seitan pieces into the pan, then add in the seitan, tearing up any larger pieces into smaller sizes. Add in the tamari, cornflour slurry and white pepper, then stir continuously and increase the heat to thicken the sauce.

3. Slice the green and red peppers into long, very thin strips. Add them into the pan with the seitan and stir-fry for 4-5 minutes until they're lightly cooked, but still have a bit of a bite to them.

4. Serve the 'Beef' Seitan and Pepper Stir-Fry with noodles and scatter over some fresh coriander to garnish - enjoy!
