Skin Food: Vegetable Thai Green Curry

I'm welcoming back my 'Skin Food' posts with open arms - a new recipe, savoury or sweet, every single Saturday - kicking off with no other than my favourite dish of them all, Thai Green Curry *stomach growls*. Throwback to my first job when I worked for a Thai lady, serving up these curries most evenings and I honestly thought it was the best thing I'd smelt. Ever. That said, I only tried my first a few years ago, yet it tasted as good as all the dreamy, nostalgic smells and it's been my most ordered meal since..


- 1 tsp coconut oil
- 1 thinly sliced white onion (or bunch sliced spring onions)
- 2 minced garlic cloves
- 1 thumb-size piece grated ginger
- 1 tbsp Thai green curry paste (be sure it's all natural)
- 1 400ml can coconut milk (or 400ml homemade)
- 1 chopped red pepper
- 1 chopped green pepper 
- 1/2 packet mange tout 
- 1 can baby corn
- 1 fresh red chilli
- Juice of 1 lime
- Handful fresh coriander/basil

- Brown rice to serve

Optional: any other veg of your choice*!

Start by melting the coconut oil in a pan on medium heat. Once melted, add in the onions until soft, then add in the garlic, ginger and Thai green curry paste and cook for a further 5 minutes. Add in all vegetables (except baby corn) and chopped chilli and cook until they begin to soften (10-15 mins). Once vegetables have softened, pour in coconut milk, add the baby corn and lime juice, cover and leave to simmer on a low heat for 20-30 minutes. Serve on a bed of brown rice, or if you're going traditional, in a bowl with a side of rice. Sprinkle with your fresh herb of choice and enjoy!

*Let me know you thoughts if you throw this one together - I usually just go with what's hanging about in my fridge but I stick to the above as a base and if I've got anything else to go in it's a bonus, and let's just say there hasn't been a single time where I haven't gone back for leftovers (if any)...
